Themed "Nusantara the Forest", all the dishes served were a combination of culinary delights from various regions in Indonesia. All the dishes were served luxuriously, majestically, and deliciously without reducing the authentic Indonesian taste.
The gala dinner menu at the 43rd ASEAN Summit was divided into two categories. The first category was for VVIP guests consisting of heads of state and leaders of international institutions. Meanwhile, the second category was for VIP guests.
Everything was carefully prepared, as evident in the readiness of the kitchen to serve delicious food to the leaders. There were three special kitchens operated at the 43rd ASEAN Summit gala dinner.
The chef of Hutan Kota by Plataran, Reiyan Trisandra, said that the three kitchens were Kitchen A, which was specifically for preparing appetisers and desserts for VIP guests, ASEAN Summit delegates; Kitchen B was to prepare the main course for VIP and VVIP guests; and Kitchen C was to cook appetisers and desserts for VVIP guests: heads of state and heads of government.

The chefs carefully and neatly created the deliciousness of each gala dinner menu. An important figure is the conceptor in preparing special menus for state leaders attending the gala dinner at Hutan Kota by Plataran.
Arnold Poernomo was again trusted to prepare delicious dishes at the 43rd ASEAN Summit gala dinner. Chef Arnold Poernomo collaborated with Hans Christian, a leading chef and owner of a famous restaurant in Jakarta; both were appointed Head Chefs at the 43rd ASEAN Summit Gala Dinner.
Both of them were also assisted by many other professional cooks, totaling 40 cooks, with several well-known chefs, including Chef Degan Septoadji (MasterChef Indonesia Judge) and Cheryl Gunawan (MasterChef Indonesia S9 Champion), together with many other skilled young cooks, and 100 assistant cooks who were students majoring in culinary arts from several tourism universities in Jakarta and surrounding areas.
